Tasting notes
Great aromatic vigour with an intense nose of golden apple and pear. On the palate the wine is well-structured with notes of apple, pear and mineral. Fresh and persistent finish.
Food pairing
Tuna and swordfish carpaccio, mozzarella di bufala, beef tartare. With local tradition dishes: cappelunghe and canestrelli. With vegetables: cous cous with vegetables.
Soave Classico area: basaltic-volcanic soil from marine origin.
On arrival at the winery, the bunches are destemmed, delicately pressed, and then stay macerating for 1-3 hours. After natural settling, the must undergoes its alcoholic fermentation in temperature-controlled stainless
steel vats. The wine then matures until it is ready for bottling.
This wine has been embellished with a “concept” label that depicts an optical study taken from the Encyclopédie Diderot, a huge encyclopaedia published in the XVIII century, which represents an important achievement following a long period of compiling a universal compendium of knowledge. It is the first example of a widely popular and successful encyclopaedia. Inspiration for this label came from the film “The Draughtsman’s Contract”, written and directed by the British film director, Peter Greenaway, which re-proposes, in a eighteenth century key, the theme of the relationship between reality, an ambiguous topic in itself, and his representation which, rather too long to be explained, makes reality even more complex and impenetrable.
