Cook the tagliatelle in boiling salted water.
While the pasta is cooking, grate the lemon zest and squeeze and reserve the juice of 1 lemon. In a saucepan, warm up the olive oil, add the zest, and cook over low flame for 2 minutes and pour in the reserved lemon juice and bring to a boil again. Make sure the lemons are not too strong other wise add just a little bit of juice. Add the Parmesan, mix well and when it starts to melt turn the flame off.
When the pasta is ready, drain it and add it to the olive oil, lemon and parmesan cheese mix. Give it a mix with the flame on and serve.
